Our aim is to add a few out-of-the-ordinary and surprisingly simple salmon tricks up your sleeve.You'll learn to prepare a hearty Salmon Wellington (just like Beef Wellington, but even more delicious) for those cold, snowy nights, smoke your own salmon in your own oven and make those smoked salmon leftovers into a delicious smoked salmon spread that's Sunday brunch-ready. Each of these will become classics in your winter repertoire. Bringing wine? Consider a smoky red.

One is a stick-to-your-ribs corn and cod "chowdah" and the other a lighter, more health conscious roasted veg and mild, responsibly-farmed salmon soup.
